What is Flammkuchen?
Flammkuchen, known in French as Tarte Flambée, is one of the most famous traditional dishes of Alsace. It consists of a thin, crispy dough topped with crème fraîche, onions and bacon.
History
The origins of Flammkuchen date back several centuries. Bakers used thin pieces of dough to test the temperature of wood-fired ovens before baking bread.
